There’s been a lot of movement at the Plaza over the past year: a new pool deck, a renovated bingo hall and two new murals, among other upgrades. The new amenities brought more guests (occupancy is up about 15 percent) but something was missing. General manager Michael Pergolini says that hotel guests were asking for a more casual lunch spot to balance out the larger portions served at Hash House A Go Go and the more formal atmosphere at Oscar’s. So the Plaza team came up with the deli concept, Brightside, to fill the void.
Located on the casino floor where Island Sushi used to be, the fast-casual restaurant is slated to open March 3 and will serve sandwiches, burgers and breakfast. Guests will order from a traditional deli counter and the food will be delivered to their seat. The space is large enough to accommodate around 100 diners. Pergolini says specialties include the bagel and lox sandwich made with pastrami, smoked salmon and veggies on a freshly baked bagel; thick-cut avocado toast topped with tomato, goat cheese and basil; and sandwiches made with a sweet, soft Hawaiian bun such as burgers or the Spam scramble breakfast roll. There will also be fresh-brewed coffee, specialty coffee drinks, beer and wine.
Brightside Deli will open from 7 a.m. to midnight Sun- Thurs and to 2 a.m. on Fri and Sat. The Plaza is currently filling open positions at the restaurant. For more information or to apply, visit playlv.com/careers.
