Lawyer/foodiepreneur Puoy Premsrirut, a partner in Downtown favorite Le Thai, broke the news to Vegas Seven that the eatery will soon open a second location. Premsrirut and business partners chef Dan Coughlin and operator Shauna Dong have been responsible for truly raising the bar on the Downtown food scene with ventures such as Bocho, Le Pho and Le Thai 1.0. Now the team is ready for round four. Here are seven stats about the new restaurant.
The Principals: Dan Coughlin, chef and operator; Shauna Dong, operations; and Premsrirut, business and legal. “Our moms and Milo Kostelecky will remain our capital partners,” she says. “This is how we help fund our mom’s retirement.”
The Location: 2202 W. Charleston Blvd. near Rancho. “It’s the old Mix Zone [restaurant] location where Dan first started [his career],” she says. “Dan [is] bullish on Downtown and [so] confident in the redevelopment that he’s returning to the original location.”
The Name: Options include Le Thai Too, Le Thai 2, Le Thai To-Go.
The Menu: It will be the same as the original but with only 15 to 20 seats. Walk up, order and self-serve—but the emphasis is on take out, to go and Postmates, Uber Eats and Grub Hub orders. Catering will also be fulfilled from this location.
The Opening: Premsrirut estimates three to four months depending on permitting and the construction timeline.
The Design: Same vibe and feel with an emphasis on the take-out, to-go and quick-service aspect.
The Numbers: The original Le Thai is serving nearly 450 covers a day with just two woks.
