It was announced over a year ago that the family-style restaurant Eureka! would be moving into the former Beat coffeehouse’s prime location on 520 Fremont St. Construction finally started on the project September 5 and it is expected to open mid-February.
The restaurant’s menu focuses on burgers, craft beer and whiskey. With more than 20 restaurants across the United States, Eureka’s chief discovery officer Paul Frederick says each menu has a general playbook with specific items unique to each location. Those Vegas-only items are still in development, along with the cocktail program. But Frederick says they will definitely be serving local brews and bread from Turano Baking Co. out of Chicago, which will soon open in Henderson.
Frederick adds that the restaurant is a sports bar for non-sports fans. There will be plenty of TVs to watch future Vegas pro sports games, but it also has a sense of style and will feature live music twice a week. While the 4,000-square-foot restaurant is dark and rustic, there will be a 40-foot long sliding door to open and brighten the place up, with seating for up to 36 on the patio. Eureka fits 172 seats total.
Frederick says the goal is to create fun, approachable items with great hospitality. They will soon be hiring and are looking for employees with the “highest-level of energy.” Hiring will begin in January and applicants can apply through the Eureka! website or LinkedIn.
